Balsamic Peach Basil Jackfruit Salad

You just met your new favorite salad! This Balsamic Peach Basil Jackfruit Salad is refreshing, filling, and so good! I was browsing Pinterest for peach recipe ideas (My parents came home with half a bushel of them so I have to find some use for them), when I ended up seeing a picture of grilled peaches. I've heard of them before, but was scared to try them. I am sure glad I did! I found that grilling peaches brings out their sweetness, while tossing balsamic vinegar adds rich flavor making them the perfect accompaniment to the Balsamic Basil Jackfruit in this salad.

You can use any greens or vegetables that you would like in addition to the salad. I just settled for some romaine, chard, kale, and tomatoes. Mix and match to what fits your taste buds.
