Beet the Meat with Vegan Meatballs... (that's what she said). With my bad puns aside, these simple vegan Black Bean & Beet Meatballs require only 7 ingredients AND are SO tasty! Seasoned with classic Italian Seasoning, these are perfect on top of pasta or just alone dipped in marinara sauce. Yes, I actually do that. Who's got the time to wait for pasta to cook?

Whenever I buy beets they seem to sit in the fridge for a while until I decide to buckle down and juice them. Juicing can take effort that I sometimes do not want to give. More like I just am to lazy to clean the juicer after using it. What can I say, these Black Bean and Beat Meatballs are perfect for the fellow lazy people out there. Even better, if you have leftovers, just freeze them for next time so all you have to do is reheat them.
