These Coconut Caramel Thumbprint Cookies are a soft and dense chewy sugar cookie filled with a decadent caramel sauce, and topped with toasted coconut. I wanted to simplify this recipe as much as possible by making it only 10 ingredients. You likely already have have them at home!
You can substitute out coconut sugar for brown, and cashew butter with any nut butter. However, I do like the tangy-ness it adds!
