CopyCat Girl Scout Caramel Delights

Girl Scout cookies are all the rage, and growing up, Caramel Delights or Samoas were my favorite.


These cookies are simple, they contain:

1. Coconut

2. Caramel

3. Chocolate


A dream team if you ask me. As I entered into the Vegan Test Kitchen, a series on my Youtube Channel where I make recipes purely off of my intuition, I decided it was time to put on the Cookie Queen hat and make some Girl Scout cookies. I don't know about you, but I hated being in Girl Scout's as a kid. The only thing I really enjoyed was the cookies. I mean who doesn't?


These Copycat Caramel Delight cookies have shortbread base, dunked in a sweet coconut caramel, dipped in toasted coconut and drizzled with a silky dark chocolate.

This Caramel Delight Cookie Recipe is:

  • Refined Sugar Free

  • Easy

  • Addictive

  • Gluten-Free Option

These crave-able cookies are made with just 11 SIMPLE ingredients, loaded with flavor, and are a bit addicting... I may or may not have eaten all of them.

For our spiritual pit stop, we are going to slow it down. The motto I have been following lately is to simply: Slow down and enjoy life.


We live in a time where everything is fast paced. From food to media, it's all encompassing. There is a need to get ahead, to want more. Sometimes so obsessively it becomes excessive.


I was taught that rest isn't good, unless on a Sunday (hello religious upbringing), but even then there was constant movement. Clean, Chores, Homework, something & anything. Luckily for this MG (manifesting generator in human design if you're confused), it was fine for me.


However, it taught me that taking a rest wasn't okay. That there should always be a need to do more, be more. There was a guilt around not being productive or consistently doing something.


In the past few months, I have been allowing myself to s l o w down, reset, & recharge by:


- Sunbathing

- Chocolate & Podcasts

- Nature (Obvious, right? haha)

- AND Playing with my dogs


It's made all the difference! I have more energy & creative ideas. Woot woot.


It's important to allow yourself time to rest, even if it varies from just a few minutes to a few hours.

* You can make it gluten-free by using All-Purpose Gluten-Free Flour and Xantham Gum.

** You can make the dough sweeter by adding more maple syrup if desired.

*** The caramel layer is quite thin on this cookie, so if you want to make it thicker, just heat up the caramel for 5-7 minutes longer!
