Okay, so Nutter Butter Cookies were my favorite dessert snack... They totally won my heart over oreos. I mean who doesn't love peanut butter? (my brother that's who) So they are totally in my heart. I mean you get to eat two cookies at one PLUS there is a peanut butter center. I mean, come on, what’s not to love?


What are Nutter Butters?

If you have never heard of nutter butters, I am shocked but also glad you have somehow ended up on this page. These Copycat Nutter Butter Cookies are just as good as they look and honestly way better than the original. This simple recipe is Vegan, Gluten-Free, and SO easy to make.

How to Make Sandwich Cookies?

Each sandwich cookie recipe is a little different, but they all have pretty much the same basic steps:


1. Make the Cookie Dough

Cookie dough is cookie dough. Whip all the ingredients together until a dough is formed. Since there is no butter in this recipe, you don't need to chill the dough!


2. Shape the Cookies

Use whichever method is best for you. For these vegan nutter butter cookies, I scooped out equal amounts of dough, rolled them into balls, and then flattened them slightly in the palms of my hands. Then, pinch the dough in the middle to get the classic nutter butter shape, then taking a fork make a criss-cross on the circular ends. Otherwise, you can roll out the dough and cut them out.


3. Bake the cookies:

No surprise here! These are very tiny, thin cookies, so don’t be tempted to over bake them. They might not look done in the oven, but they will be.


4. Let the cookies cool:

Before adding the ganache filling, you HAVE to let the cookies cool completely.


5. Assemble the sandwich cookies:

Once the cookies are fully cooled, dollop or pipe some filling onto one cookie and sandwich another on top.

How to store sandwich cookies

If you think you’ll have too many sandwich cookies leftover, I recommend freezing a few of the cookies before you assemble them. Then, when you’re ready to eat the sandwich cookies you can make a small batch of frosting and enjoy them right away. If you think you’ll be eating these cookies by the end of the week, pop them into an airtight container and keep them on your counter. They’ll be gone before you know it!
