Is there really such a thing as mashed potatoes without gravy?
The answer to that is yes, BBQ'd lentils, but I'll save that for another time.
But I mean come on, this classic side dish is best known for its starring role with mashed potatoes. It's an iconic duo that has been around ever since I was a tot and eating ... KFC... yeah, I shudder at that too but I simply cannot deny it was some damn good potatoes and biscuits.
BUT those ingredients are not vegan-friendly. Hell, most gravies aren't. I know it's shocking. It seems like one of those dishes that seems like you would be able to eat it, but find out they put some turkey in it.
*cue staring into the camera Office style*
Luckily, I have brought that classic gravy taste back to life with this Easy Mushroom Gravy – it’s Vegan, Gluten-Free, and made with only 7 plant-based ingredients – and still hearty, delicious, and has a great depth of flavor.

Alright, so why are is this Easy Mushroom Gravy the best?
Completely Vegan. No worries this recipe is completely free of animal products and tastes, dare I say... even better!
Simple. All you need are 7 basic ingredients for this. Yep, that is it.

Some Final Thoughts & Tips:
I used cornstarch to thicken my gravy, but have had success with a generic Gluten-Free flour blend as well. If you are not GF, you can also use All-Purpose Flour.
This Gravy will thicken with time and as it cools, so I suggest that you make it as close to serving as possible. If you do have to reheat it, add additional Water or Vegetable Broth to it and whisk until smooth.
If you want, you can blend the gravy for a smooth finish or you can leave it as is.
