It has been a hot minute since I have created a recipe, so I decided to bring in the new year with a little bit of a healthy recipe.
Okay, okay it is a very healthy recipe, but damn tasty one if we are being honest.
These Healthy Peanut Butter Banana Muffins are a quick and easy way to start the morning. Let's just say, this easy recipe is Vegan, Gluten-free, refined sugar-free, and these muffins are made with just 10 whole, simple ingredients.
With the new year comes a new energy. A new wave of wanting to create change in your life. So if you are here, that is showing me that you are ready to stand up and create a change by the simplicity of making a muffin... that happens to be vegan.

The thing is, you cannot expect the world to change if you don't change yourself.⠀ ⠀ We have grown into this disconnection to ourselves and to our remedies and to our land. Thinking of the trees, the plants, the animals, as less than us and not born of the same energy and spirit.⠀ ⠀ Rather deeming these thoughts and beliefs as demonic, weird, or woo-woo.⠀ ⠀ It is time for us to wake back up to ourselves. To no longer hide from the wilderness that is born through our veins. To no longer hide from the authenticness that is buried beneath our skin.⠀ ⠀ You cannot expect the world around you to change if you in yourself do not make the conscious choice to change your practices, your beliefs, your world.⠀ ⠀ Why?⠀ ⠀ You influence the people in your life as much as a large influencer on social media.⠀ ⠀ When I was 16 I started being more natural, becoming a vegetarian, thrifted, made my own lotions and soaps. 6 years ago I was viewed as strange 'out there' now it has become normalized. People in my family eat less meat, some are vegetarian, some are now vegan and are more conscious of what they put on their skin and on their bodies. ⠀ ⠀ Your voice is important.⠀
Even if you think it is not.
So get out there and use it.

Super sweet & quick. Time is so essential, so I wanted to make this easy vegan dessert as quick as possible. Seriously, you can make this in under an hour.
It is healthy. Um, do you see those ingredients? Damn.
It is made gluten-free. WOOT WOOT!
Some Final Thoughts & Tips:
Refined Sugar-Free Option: Don't want to use refined sugar? No problem! Substitute out coconut sugar for the brown sugar.
On Storing: Store your leftover muffins in an airtight container for 2-3 days.
