How to Make Fluffy NY Style Bagels

I will admit I am a bagel lover. While recipe testing this past week I have had my fair share of them(about 20). I've wanted to make this recipe for a while. Ever since I tried making them at home a few years ago they were missing something, or two things:

1. Crunch

2. Fluffy Texture

Definitely needed in a bagel! Am I right?

This recipe combines the age old techniques from the pros while making it more accessible for at home and less time consuming. You could easily go to the store to pick some up, but lets be honest they can be quite dense and loaded with preservatives I couldn't try naming.
