Peppermint Whoopie Pies (vegan)

Peppermint Whoopie Pies (vegan)

Yo, DJ, hit that replay!

Okay, tbh, I am the ultimate DJ, what can I say I have some damn good taste in music, but what I am really talking about here is that I have just created the ultimate minty, dreamy, delicious vegan dessert!

Ever have those Oreos that were made of cake. We'll call them cakeos. Basically this tastes just like those, but with a minty twist.

Woot Woot.

If you hate the taste of mint extract you can take it out for a more traditional taste or add a little in for a dash of flavor. So snuggle up this holiday season with these Peppermint Whoopie Pies. Rich, Quick, Easy, and Vegan. A delicious wintertime treat, these cake-like cookies are layered with a rich frosting and make for the perfect anytime snack.

Alright, so why are these Vegan Apple Cider Donuts the best?

  1. Dairy-Free + Egg Free. Most whoopie pie recipes use butter and eggs to help with the texture and fluffiness, but no worries this recipe is completely free of both and tastes, dare I say... even better!

  2. Quick & Easy You only need less than 1 hour of your time to make these tasty af treats.

  3. Rich flavors.

Some Final Thoughts & Tips:

  • Additions: You can sprinkle on crushed peppermint pieces around the sides of the whoopie pies for a more decorative look.

  • How much does this make? Well, that depends on how big you make the cookies. I made about 24 cookies. You can make them as small or as big as you would like!

  • Coconut Oil instead of vegan butter? You can certainly use it, however, the texture may be different and they may thin out more.
