It is truly the raw vegan cake of my dreams. It is naturally sweet, healthy, tender, AND topped with a delicious, creamy vegan cream cheese frosting! Best of all, all you need is just 8 basic ingredients and 30 minutes.

That is why I HAD to recreate my favorite cake into raw form. If you are feeling crazy or don't feel like doing all the work, you can just make these into cake bites by rolling one tablespoon of dough in your hands and placing it on a lined pan. Freeze it for a few minutes and you have yourself a delicious Carrot Cake Bites!
