I got the idea to make this recipe when I was looking through my pantry for a snack to eat when I came across some old "healthy" granola-esque bars that were honestly a #fave of mine growing up and continue to be a fave of everyone else in my household.
So I looked at the ingredients to see if I could have one... and BOOM the little words at the bottom of the package said, "Contains Egg, Dairy, Wheat, and Soy"
3 out of the four things I do not eat, so I sighed heavily for dramatic effect and decided well I guess I have to make my own now.
So here we are.
These soft-baked bars are infused with lemon flavor and drizzled with a zesty icing. These vegan bars will satisfy any sweet tooth! All you need are 8 simple plant-based ingredients.
