Sweet Potato Waffles

Pancakes or waffles? Um, WAFFLES! More specifically these Sweet Potato Waffles...


After watching a few too many episodes of the show "Parks and Rec", I got hungry for waffles. I didn't feel like heading to a fictional JJ's Diner in my mind to get waffles, so making my own would have to do. The thing I wanted to create most from a waffle recipe was for it to be

  1. Gluten-Free

  2. Easy

  3. Healthy

After debating on whether to attempt at making banana waffles I decided to but down the banana phone and give sweet potatoes a try. I'm glad I did because these bad boys are decadent, crispy, and full of flavor!


These Sweet Potato Waffles are only 6 ingredients and incredibly easy to make. The sweet potato gives these waffles a nice golden color, while the warm spices add wonderful flavor. They are crispy on the outside and soft in the inside.

Vegan Sweet Potato Waffles (Quick & Easy)

If you are like Leslie Knope on the show, dousing the waffles in whipped cream is a must, but fresh fruit and syrup work too. You can also make a simple chocolate sauce by whisking cocoa powder, milk, and a little bit of sweetener together until it is smooth!

These Sweet Potato Waffles are:

  • Crispy

  • Flavorful

  • Fluffy

  • Naturally Sweet

This is definitely one of my favorite breakfast recipes I have created and is perfect if you are eating a low sugar diet or refined sugar-free lifestyle. The natural sweetness of the baked sweet potatoes makes your forget that you didn't even have to put on maple syrup to call this meal complete.
