Calling all sugar cookie lovers to the building!

Well, welcome and thank you for showing up for this new era of fabulousness that is these Sugar Cookie Bars. The best part is that there is no chilling, rolling, cutting, or decorating. These chewy, soft vegan sugar cookie bars are SO delicious and are layered with a thick layer of vegan frosting.

How to make sugar cookie bars?

If you’ve never had sugar cookie bars, you’re in for quite a treat. Picture your favorite sugar cookie recipe in just a fraction of the time. All you have to do is make a sugar cookie dough and bake it into a square pan. Then, slather on some amazing vegan frosting and you’ve got yourself a cookie cake.

These frosted sugar cookie bars are seriously addicting and so, let me repeat, so easy to make. If you’re craving that chewy, vanilla sugar cookie, but are feeling a little too lazy to roll the dough out and cut out shapes this is the recipe for you!

Some Final Thoughts & Tips:

  • Variations/Additions? You can add in 1/4 teaspoon of almost extract to the dough to complement the vanilla. For the frosting, you can make it any flavor that you want! Feel free to experiment.

  • On Storing: Store your leftover bars in an airtight container for up to one week.

  • Coconut Oil instead of Vegan Butter? Answer: yeppers peppers. You may just need more or less liquid in the recipe.
