As winter begins to fade, we begin to bring in more fresh, light recipes. We move from a place of heavier, grounding meals into those that are more light. Notice if you eat more smoothies instead of oats during the warmer season because I sure do! The most basic reasoning behind this, is because out bodies are trying to stay cool! We can talk about that later, but for now let's just talk about cake! I felt inspired to make a lemon poppy seed cake mainly due to my body saying, "Where's the sweets at Liz?" So naturally, it was time to soak the dates and get creating this tasty recipe.
