Vegan Peach Galette

We are nearing the end of summer, so what better way to send this delightfully hot season off with peaches! This easy Vegan Peach Galette has a flaky, crisp pie crust, topped with fresh, juicy cinnamon-spiced peaches.


If you are reading this and thinking, "WTF is a Galette?" I was in the same boat. So in basic terms, a Galette is a free form tart with sweet or savory filling.


It is all about the sweets over here, so today we are using stone fruits (peaches, plums, nectarines, etc) inside the filling. You can use other fruit, BUT the cornstarch and sugar ratio can differ.


Luckily for you, this simple & rustic dessert just needs:

This recipe is easier than a pie, but just as good. Dare I say even better.

Spiritual Pit Stop

Hitting ROCK BOTTOM was the best thing that ever happened to me... Just saying.🤷⠀ 3 years ago, everything I had, knew, or familiar with was ripped from my tightly bound grasp. ⠀ In crawled depression, anxiety, saying ✌ out to all of the people I called friends, had no job and had little to no contact with other humans besides for in a classroom setting, and lastly, family members had bad health issues re-emerge. This was my not so little storm that stayed around for about a year.⠀ Anywho, for the first time in my life, I was completely alone and immersed in myself. ⠀ You could say I was on a solo retreat I did not remember signing up for, being forced to engage with aspects of myself I had bottled down. ⠀ Yikes.⠀ For the majority of my life, I played a role so that I would be liked by others, feel seen, validated. I wore layers of masks that found their ways in my speech, clothes, and friends. Until suddenly that role was no longer getting cast and the props were thrown out.⠀ I was being pushed to face everything that was no longer aligning with me, and what was hindering me from being my authentic self.⠀ During this time many things left my life, as space was being created for the new to be allowed in. This meant letting go of my belief around control and other limiting beliefs.⠀ I had (& continue to) work through these belief structures and releasing negative stagnant energy that was being stored in my body. All while learning and implementing spiritual practices that my soul had been craving and needing, but was lacking.⠀ It pushed me to heal, to create, and RECONNECT with myself on a deeper level. TBH, I probably wouldn't have changed much if this didn't happen.😬⠀ ✨So, LET'S CHAT! Have you experienced a rock bottom or a moment that made you change who you are or where you are going? Some Final Thoughts & Tips:

  • Other Fruits? You can try using other fruits in this recipe, but you may need to use less cornstarch depending on what fruit you use. Example, if you were to use apples, I recommend using LESS cornstarch!

  • Store It: In airtight container for 3-5 days in the fridge!
