Easy Vegan Falafel

Need quick dinner inspo? These Easy Baked Vegan Falafels are perfect for dinner! You can stuff these satisfying little bites into pita bread or even on top of greens.


However, I do want to mention that these Falafels are not your traditional because they:

  1. Are made from cooked Navy Beans instead of soaked Chickpeas

  2. Uses Basil & Cilantro instead of Parsley & Coriander

I did this because I am incredibly intolerant to chickpeas and they do not digest properly, and I simply forgot to buy parsley. I tried haha. They do taste just as amazing as the original and are topped with tomatoes, onion, and a smooth & savory tahini-dill sauce.

This Easy Vegan Falafel recipe is:

This quick and easy recipe is perfect for those busy weeknights. You can also make them ahead of time and freeze them before making them!

For our spiritual pit stop, we are going to talk about how to handle life's craziness and unpredictability. The past few days have been a complete whirlwind of insane. Then, you are able to move through these forks in the road with greater ease.⠀ Moving from a place of reaction to one of response & reflection.⠀ ACTION: Think of something that is challenging you or triggering you recently or today. Ask how it is making you feel and what is this here to teach you. Journal, meditate, do yoga, paint, or take a walk with the intention to get a full understanding of what is occurring or to let these feelings pass through you.⠀ What are some tools you have cultivated over the years to help you in challenging times?
