Yep, this is happening. My latest take on Vegan Pulled Pork is probably one of my favorites.
It contains these three basic ingredients:
Lentils
Mushrooms
BBQ Sauce
It is that simple, and is SO tasty. I can't lie, I kind of prefer it to my Jackfruit version.
So get out the BBQ Sauce and let's get cooking!
My first attempt at vegan pulled pork was successful after jumping on the jackfruit train.
This Vegan Pulled Pork Recipe is:

It is time for our weekly Spiritual Pit Stop! This week we are talking about listening to your body.
"What??"That was what I first thought when I heard that phrase. Frankly, it did not make any sense to me at all. My mind echoed, "How am I supposed to listen to my body when I have no idea what it is saying?"In many ways, we have become skilled at thinking of our body as separate from us. A pal across the pond who speaks a different language.
It wasn't until I started yoga that I deeply understood how our body is in constant communication with us. From aches, pains, hunger, & the like, it is always letting us know what is good and what isn't. Sometimes in subtle or not so subtle ways.
Here is a simple way to connect and listen to your body daily, or what I like to call the daily Body Check-in.
Periodically throughout your day, scan your body from head to toe. Noticing the sensations of your breath, the temperature around you, observing any feelings that come up, any tension. Breathing into them and noticing.
This technique allows you to look deeper into what is happening, while also giving you time to ground and relax even if it is only 2 minutes.
If you try out this recipe or the daily Body Check-in make sure to let me know! Leave a comment, rate it, and don’t forget to tag a photo #underthewillow on Instagram.
