One cook's "Spanish" rice is another's "Mexican." Whatever the name may be, the end result is more or less the same: an orange rice flavored with onion and garlic and colorfully tinted red from tomato sauce. This rice is similar to those you will find at restaurants. I tried making this as authentic as possible by sauteing the rice in oil. Luckily for us non-meat eaters you can get vegan "chicken" flavored stock to use as broth to bring out those traditional flavors. Overall, this Easy Spanish Rice is sure to be a family favorite.
